Recipe makes 6 Servings

10 Oz H-E-B Organics Julienned Carrots
1/3 cup(s) fresh mint, roughly chopped
1/2 cup(s) fresh cilantro, roughly chopped
1/4 cup(s) fresh lemon juice
2 Tbsp Aldonza Extra Virgin Olive Oil
2 serrano peppers, stems & seeds removed
3 garlic cloves, smashed
1 1/2 Tsp cumin
1 Tsp coriander

In a food processor combine, carrots, mint, cilantro, lemon juice, olive oil, serrano peppers, garlic, cumin, and coriander.
Pulse to combine, but don't over process as mixture should still have some texture.
Place into a serving bowl, season to taste with salt and pepper, serve over your favorite meats or as a vegetable dip.
