Recipe makes 8 Servings

1 Tbsp olive oil
1 1/2 Lb H-E-B Seasoned Beef for Carne Guisada
3/4 cup(s) red onion, finely diced
3/4 cup(s) red bell pepper, finely diced
15 Oz H-E-B Diced Tomatoes for Chiles
15 Oz refried black beans
8 Mi Tienda by H-E-B Yellow Corn Tostadas
1/3 cup(s) fresh cilantro, finely chopped
1/2 cup(s) fresh sweet corn, scraped from the cob or thawed frozen

Place a large skillet over high heat, add oil and meat to pan.
Break apart chunks and sear well, cook for about 8 minutes.
Turn heat to medium high and add onions, bell peppers and tomatoes. Cook until onions are soft and meat is tender.
Meanwhile, heat refried black beans thoroughly in a small pan or microwave.
To assemble tostadas spread a layer of refried beans on tostada shell. Add carne guisada mixture, cilantro and sweet corn on top. Serve immediately.
Chef's Note: Garnish with salsa, sour cream or guacamole if desired.
