Caramelized Onion and Mushroom Texas Toast Pizza

Recipe makes 2 Servings

4 Tbsp salted butter, divided use
2 Tbsp olive oil, divided use
4 yellow onions, cut in 1/2-inch slices
1/2 Lb sliced mushrooms
1/2 Tsp kosher salt
1/4 Tsp black pepper
2 slices H-E-B Select Ingredients Big Bread
2 slices mozzarella cheese
2 slices provolone cheese

In a large sauté pan placed over medium heat, melt 1 tablespoon of butter and 1 tablespoon of olive oil.
Add slices of yellow onion and stir to coat. Cook 45 minutes on medium to medium-low heat, stirring every few minutes. Onions will steam as they cook and reduce moisture so you want to stir then let onions sit briefly.
When onions are a rich golden brown, transfer to a plate.
In the same pan, add another tablespoon of butter and remaining oil. Sauté mushrooms over medium-high heat for 3 to 4 minutes or until browned and tender.
Turn on broiler.
In a second large sauté pan over medium heat, add 1 tablespoon of butter and both slices of bread (if they fit). Toast bread for about 2 minutes then add last tablespoon of butter, flip bread and toast the other side.
Place toasted bread on a sheet tray and top with caramelized onions, mushrooms and equal amounts of cheese slices.
Broil until bubbly and melted, about 30 seconds to 1 minute.
