Caprese Style Beets with Blue Cheese and Fig Vinegar

1 large bunch of organic beets, tops and bottoms trimmed
1 Tsp Mi Tienda Orange Pepper Seasoning
4 Oz crumbled blue cheese
1 Tbsp Acetum Agretti Sweet Fig Vinegar

Instructions

Preheat oven to 400°F.

Place beets in a roasting pan with 1 cup of water.

Cover with foil and roast 45 to 60 minutes, or until beets are fork tender. Remove and keep covered to cool.

Once beets are cooled, wipe skin off beets using a paper towel.

Slice thinly and lay them overlapping onto a serving dish.

Sprinkle liberally with orange pepper and spread blue cheese evenly over beets.

Drizzle with fig vinegar and season to taste with more orange pepper.
