Recipe makes 8 Servings

1 large sweet potato, peeled and cut into 1/2-inch cubes
1/2 cup(s) Reduced Fat Feta Cheese Crumbles
1/2 cup(s) Fat Free Sour Cream
4 garlic, chopped
2 Tbsp olive oil
1/2 cup(s) basil bunch, thin sliced
1/2 cup(s) sundried tomatos, cut into strips
1 cup(s) H-E-B Roasted Red and Yellow Peppers, thin sliced
6 1/2 Oz H-E-B 100% Whole Wheat Pasta
1/8 Tsp kosher salt
1/8 Tsp black pepper

Place sweet potatoes in microwave-safe bowl, cover, cook in microwave on high power for 4 minutes or until tender.
Meanwhile, combine sour cream, feta cheese, garlic, olive oil, basil, sundried tomato and peppers in large pasta bowl.
Cook pasta according to package directions, drain.
Add pasta and sweet potatoes to pasta bowl.
Toss and season with salt and pepper. Serve warm or cold.
