Ingredients

Recipe makes 8 Servings

1 non-stick cooking spray
2 large zucchini, sliced thin
14 1/2 Oz super sweet corn
14 1/2 Oz diced tomatoes
14 1/2 Oz diced green chilies
27 Oz marinara sauce
8 Oz Mexican blend cheese, shredded
30 Oz ricotta cheese
9 H-E-B® No Boil Lasagna

Heat oven to 375°F.

Spray a 9 x 13-inch microwave-safe baking dish with non-stick cooking spray and set aside.

Combine zucchini, corn, diced tomatoes, diced green chilies and marinara sauce in a large bowl; set aside.

Combine shredded cheese and ricotta cheese in a bowl and set aside.

Spread 1 cup sauce mixture in prepared baking dish.

Top sauce with 3 lasagna noodles, 2 cups vegetable sauce and 1 1/2 cups cheese mixture.

Repeat one more layer and top with 3 more noodles, remaining cheese and sauce mixture.

Bake the lasagna in the oven on the center rack for 40 to 60 minutes or until lasagna is bubbly in center and cheese is melted.

Cool lasagna for 10 minutes before cutting and serving.
