Ingredients

Recipe makes 6 Servings

2 Tbsp canola oil, divided
1 Tbsp garlic, minced
1/2 yellow onion, diced
1 green bell peppers, diced
2 15 oz. cans red beans, rinsed & drained
1 cup(s) pouch Central Market Microwavable Ancient Grain Barley and Lentil Blend, cooked per package instructions
1/2 Tsp H-E-B Texas Originals Cajun Seasoning Spice Blend
1 Tbsp tabasco pepper sauce
1 egg, beaten
1/2 cup(s) panko bread crumbs
3 Tbsp mayonnaise
3 Tbsp Creole mustard
2 Tbsp green onions, minced
2 Tbsp parsley, chopped
6 whole wheat hamburger buns, toasted
6 iceberg lettuce

Instructions

Heat half of oil in a medium sauté pan on medium-high. Add garlic, onions, and bell pepper, and cook several minutes until tender.

Remove from heat and cool 2 - 3 minutes.

Mash beans with a fork in a large bowl.

Add barley & lentil blend, Cajun seasoning, hot sauce, egg, panko, and cooked vegetables. Mix well.

Form into 8 patties and set aside.

Return pan to heat and add remaining oil.

Cook patties 3 minutes per side.

Combine mayonnaise, Creole mustard, green onions and parsley.

Spread sauce on toasted buns then add burgers and lettuce. Serve.
