10 .7000 Oz H‑E‑B Select Ingredients Butternut Squash Spirals
1/2 cup(s) onion, grated or finely chopped
2 large eggs, beaten
1 Tsp garlic powder
3 Tbsp all purpose flour
1/2 Tsp kosher salt
1 cup(s) plain yogurt
2 Tbsp Gourmet Garden Lightly Dried Chives

Instructions

Place butternut squash spirals on a cutting board and roughly chop until pieces are about 1 to 2 inches in length, then transfer to a bowl.

Next shred or grate onion into a clean dish towel. Fold or twist up the towel to remove any extra moisture from onion then transfer to bowl with squash.

Add eggs, garlic powder, flour and salt to bowl and mix well to coat.

Heat a large non-stick skillet on medium heat. Lightly spray with non-stick spray and spoon 1/3 cup portion of latke mixture into pan. Using a spatula lightly press down on latke.

Cook latke on one side for about 4 minutes then flip and press again. Cook an additional 4 minutes or until nice and browned. Transfer to a plate and continue until all mix has been used.

Mix yogurt and chives together and serve alongside the latkes.
