Recipe makes 2 Servings

6 Oz lobster tails, thawed
1/4 cup(s) white wine
1 cup(s) butter, cut into chunks
1 Tsp chives, chopped

Remove shell from lobster: hold tail in one hand with top of hard shell facing up. Using kitchen shears, cut through top shell and through meat, stopping just before bottom shell. Do not cut through wide end of tail. Carefully lift meat away from shell.
In a shallow pan, bring white wine to a simmer then whisk in cut butter a few pieces at a time until melted.
Add lobster meat to simmering wine butter mixture and cook 3 minutes per side, basting exposed meat. Remove tails once they reach 140ºF.
Garnish with chives and serve alongside steak.
