Recipe makes 16 Servings

8 large eggs, hard-cooked
1 Tbsp mayonnaise
1 Tbsp mustard
1 Tbsp parsley, chopped
2 Tbsp H-E-B Pickle Me Relish Whole Dill Relish
2 H-E-B Stuffed Manzanilla Olives, sliced
1/4 cup(s) Bolthouse Farms Matchstix Carrots
1/4 red bell pepper

Peel eggs and slice into halves. Place egg white halves on plate and set aside.
Combine egg yolks, mayonnaise, mustard, parsley and relish in a small bowl. Mash and stir egg-yolk mixture with fork or electric mixer. Season to taste with salt and pepper.
Place mixture in zipper bag and snip off 1/2-inch hole from corner of bag. Evenly squeeze mixture into 16 egg-white halves. Decorate eggs with olive slices for eyes, matchstix carrots for whiskers, and red bell pepper triangles for ears.
