Buffalo Chicken Kabobs with Roasted Ranch Sweet Potatoes

Recipe makes 4 Servings

1 cup(s) Greek yogurt
1/4 cup(s) Frank's Red Hot
1/2 Tsp black pepper
1 Lb boneless skinless chicken thighs, sliced into strips
2 sweet potatoes, peeled and cut into 1 inch pieces
1 Tbsp olive oil
2 Tbsp powdered ranch dressing mix

Preheat oven to 425°F and set grill to high heat.
Mix yogurt, Frank's Red Hot, and pepper together.
Thread chicken onto wooden or metal skewers then cover chicken with yogurt mixture. Place on a plate and set in fridge for 30 minutes.
Meanwhile toss potatoes with oil and ranch powder. Place on a sheet pan and roast in oven for 30 minutes.
After potatoes have roasted for 20 minutes, place skewers on hot grill. Grill for 15 minutes, turning once or twice.
Once chicken reaches 165°F, remove from grill and serve with potatoes.
