Recipe makes 4 Servings

1 Tbsp olive oil
4 boneless, skinless chicken thighs, hammered 1/4-inch thin
4 H-E-B Organics Basil, leaves with stems removed
6 Oz H-E-B Mozzarella, cut into 1/2-inch slices
4 Campari Tomatoes, sliced 1/4-inch thick
1 1/2 cup(s) Mom's Spaghetti Sauce

Instructions

Preheat oven to 400°F.

Preheat medium sauté pan over medium-high with oil.

Season flattened chicken with a pinch of salt and pepper. Layer basil, cheese slice and 2 tomato slices on chicken.

Carefully roll up chicken and secure with 2 toothpicks or twine.

Sear chicken 1 minute per side. Meanwhile, line baking dish with sauce.

Place chicken over sauce and bake 18 to 20 minutes or until cooked through.

Remove toothpicks and serve chicken over pasta. Spoon sauce from dish over chicken and pasta before serving.

Chef's Tip: Place chicken between two pieces of plastic wrap before flattening with mallet for easy clean up.
