Browned Butter Coconut Bars

Recipe makes 24 Servings

1/2 cup(s) salted butter
2 cup(s) H-E-B Organics Coconut Sugar
2 large eggs
1 Tbsp vanilla
1 cup(s) unbleached all purpose flour
1/4 Tsp salt
2 Tsp baking powder
1 1/2 cup(s) organic unsweetened coconut

Preheat oven to 350ºF.
Line a 9 X 9-inch pan with a piece of foil long enough to fold over top edge of pan. Then give a quick spray of non-stick cooking spray. Set aside.
Over medium heat, melt butter in a pan and simmer until it starts to foam and turn golden brown.
Stir in coconut sugar and remove from heat. Mixture will be thick like wet sand.
In a medium-sized bowl whisk together eggs and vanilla. Add sugar/butter mixture and stir well.
In a separate small bowl whisk together flour, salt and baking powder.
Stir into eggs/butter mixture. Then add in coconut and stir well to incorporate.
Spread evenly in prepared pan and bake 25 minutes.
Place pan on a wire rack and cool 30 minutes. (Cookies will be very crumbly if cut while hot).
When cool, lift foil edges to remove from pan, place on cutting board and cut. Makes about 36 bars.
