Brown & Wild Rice with Fruits & Nuts

Recipe makes 8 Servings

1 cup(s) H-E-B Long Grain Brown and Wold Rice
2 Tsp Hill Country Fare Extra Virgin Olive Oil
3 Tbsp red onion, chopped
3 Tbsp Hill Country Fare Almond Slivers
2 cup(s) water
1/2 Tsp salt
2 Tsp orange, zested
1/2 cup(s) H-E-B Dried Cranberries, chopped

Rinse and drain the rice.
Heat a heavy 2 quart saucepan over medium heat for 2 minutes.
Add the rice, olive oil, onions and almonds to the pan and stir-fry for 4 minutes.
Add 2 cups water, salt, orange peel and dried cranberries to the rice and bring the mixture to a boil over high heat.
Reduce heat to medium low, cover and cook for 40 minutes.
