Ingredients

Recipe makes 8 Servings

2 baking potato
1 bag (16 oz) H-E-B Broccoli Florets
1 Tbsp olive oil
1/2 white onions, diced
1 egg
2 cup(s) panko bread crumbs

Instructions

Preheat oven to 400ºF.

Wash and dry potatoes, using a fork poke several holes in skin.

Bake potatoes until soft.

Set aside until cool enough to handle. Leave oven on.

Meanwhile place broccoli in microwave and cook according to package directions.

Once broccoli is cooked, chop into small florets.

Once everything is cooked, place all of ingredients into large bowl.

Mix well and form into 8 patties.

Place each patty on foil lined baking sheet.

Bake 10 minutes, flip and bake an additional 10 minutes.

These may be prepared ahead of time and frozen. To reheat place in oven 10 minutes per side.
