Broccoli and Cauliflower Quinoa Burgers

Recipe makes 4 Servings

1 12 oz. bag H-E-B Broccoli & Cauliflower Florets
1 15 oz. can chickpeas
1 cup(s) Central Market Quinoa
1 Tbsp whole grain mustard
3 Tbsp Bragg Liquid Aminos
1/4 cup(s) corn flour
2 Tsp garlic powder

Instructions

Preheat oven 350ºF.

Microwave vegetables according to package directions and let cool enough to handle.

Add broccoli and cauliflower to a food processor and pulse until chopped into very small pieces, 10 - 15 pulses. Add chickpeas, quinoa and mustard and pulse until a dough starts to form.

Transfer mixture to a bowl, add in remaining ingredients (starting with 4 tablespoons flour) and knead by hand until dough can be formed into patties, adding more flour as needed.

Form dough into patties and place on a parchment lined sheet/plate. Chill in fridge for at least 1 hour.

Line a baking sheet with parchment, add patties and bake on the center rack for 20 - 30 minutes, flipping halfway through, until burgers are crispy.
