1 Tsp Hill Country Fare Canola Oil
2 Tbsp onion, chopped
1/4 cup(s) bell pepper, chopped
1/4 cup(s) tomato, chopped
1 Tbsp jalapeño, chopped
1 Tbsp cilantro, chopped
1/2 cup(s) H-E-B Real Egg
1 H-E-B Yellow Corn Tortilla, cut into thin strips
1/4 Tsp Hill Country Fare Fajita Spice
2 Tbsp H-E-B Salsa Mild

Instructions

Heat a heavy bottom skillet over high heat for 2 minutes.

Add the canola oil and onions and stir-fry for 2 minutes.

Add the bell pepper and tomato and stir-fry for 1 minute, then add jalapeños and cilantro and stir-fry for 1 minute.

Reduce heat to medium low and add the eggs stirring often until eggs are cooked to desired doneness.

Add the tortilla strips and stir until strips are heated through.

Season with fajita spice and top with salsa if desired and enjoy!
