Branzino with Tomatoes and Kalamata Olives

Ingredients

Recipe makes 4 Servings

4 branzino fillets
2 Tbsp extra virgin olive oil
1 Pt grape tomatoes, sliced in half
1/2 cup(s) pitted kalamata olives, roughly chopped
1/4 cup(s) white wine
2 Tbsp lemon juice
3 Tbsp unsalted butter
1 Tbsp chives, chopped fine

Instructions

Season fish liberally with salt and pepper and set aside.

Set a large non-stick skillet over medium-high heat. Add olive oil and sear fish 3 to 4 minutes before flipping and finishing skin side down.

Once fish is cooked remove, in the same pan and add tomatoes, kalamata olives, wine and lemon juice.

Add butter and chives and whisk together until sauce is emulsified and just thick.

Remove from heat and pour over fish. Season as needed to taste.
