Recipe makes 8 Servings

1 Tbsp canola oil
1/4 Tsp kosher salt
1/4 Tsp black pepper
2 Tbsp ground cumin
1 1/2 Lb pork loin
2 large carrots, chopped
1 large onion, chopped
2 large potatoes, quartered
2 sprigs rosemary
2 Tbsp garlic, chopped

Mix oil with salt, pepper, and cumin. Add pork and turn to coat.
Heat a large pan to medium-high. Add pork and cook 15 minutes, turning often.
Once seared, place pork in a slow cooker.
Add carrots, onions, potatoes, rosemary, and garlic to same hot pan used for the pork and sauté; 10 minutes.
Pour potato mixture over pork and add chicken broth.
Cover slow cooker, turn heat to low, and cook 8 hours.
