Blood Orange Agro Dolce

Ingredients

Recipe makes 4 Servings

1/3 cup(s) sugar
1 cup(s) fresh squeezed blood orange juice, and zest from 1 blood orange
1/2 cup(s) white balsamic vinegar
1/2 Tsp kosher salt
1/4 cup(s) shallots, roughly chopped

Instructions

In a saute pan add sugar, blood orange juice and zest, vinegar, salt, and shallots.

Bring to a boil, then reduce heat to a simmer. Cook until liquid is reduced by almost half and is thick enough to coat back of a spoon.

Remove sauce from heat, strain out all particulates and set aside to cool. Sauce will thicken as is cools.

Serve over roasted chicken or drizzle on salads or cheeses.

Chef's Note: If sauce thickens too much once cool simply add a little water to sauce and whisk together until desired consistency is reached.
