3 H-E-B Large Grade AA Eggs, yolks only
2 Tbsp lemon, juiced
1/8 Tsp H-E-B Iodized Salt
1/8 Tsp Central Market Organics Cayenne Pepper
1/2 cup(s) unsalted butter, melted

Instructions

Combine egg yolks, lemon juice, salt and cayenne in blender, and cover.

Quickly turn blender on and off.

While blender's running, slowly pour a thin stream of hot butter into egg yolk mixture, blending until thick and fluffy for 30-60 seconds.

Serve immediately or pour sauce into a bowl, and place in a warm water bath until ready to serve.
