Blackened Salmon with Homemade Rub

Recipe makes 4 Servings

1/4 cup(s) chili powder
1/4 cup(s) paprika
2 Tbsp kosher salt
2 Tbsp ground coriander
2 Tbsp garlic powder
2 Tbsp light brown sugar
2 Tbsp ground mustard
1 1/4 Tbsp black pepper
1 Tsp cayenne
1 Tbsp thyme leaves
1 Tbsp ground cumin
1 Lb salmon fillet
2 Tbsp Avocare Avocado Oil

Assemble spice rub and coat salmon with a liberal amount. Set aside for 10 minutes. NOTE: Seal leftover rub in a bag or container and use it over and over. Good for 6 months.
Preheat grill to 350ºF or medium heat. Spray or wipe grill liberally with avocado oil (keeps fish from sticking).
Grill salmon 3 to 4 minutes per side or until internal temperature reaches 140ºF. Serve with sweet potato fries or dirty rice.
