Ingredients

Recipe makes 6 Servings

1 can (14.7 oz) pink salmon, 2 Cans
2 H-E-B Large Grade AA Eggs
1/2 cup(s) green bell peppers, diced
2 cup(s) Hill Country Fare Whole Wheat Bread Crumbs
4 Tbsp H-E-B Blackened Seasoning Spice Blend
1/4 cup(s) Hill Country Fare Vegetable Oil

Instructions

Combine salmon, eggs, peppers and 1 cup of bread crumbs in a large bowl. Mix very well and set aside.

In a shallow dish mix together remaining cup of bread crumbs and seasoning.

Warm 2 tablespoons of vegetable oil over medium-heat in a non-stick skillet.

Take 2 heaping tablespoons of salmon mixture and form into a patty.

Bread patty with seasoned crumbs and place in skillet. Do not over fill skillet with patties.

Cook on each side until golden brown and add salt.
