Blackberry White Chocolate Treat

Recipe makes 10 Servings

4 cup(s) fresh blackberries
7 Tbsp H-E-B Cane Sugar
1 Tsp H-E-B The Baker's Scoop Double Vanilla Extract
1 cup(s) H-E-B Heavy Whipping Cream, very cold
1/2 cup(s) white chocolate chips
1 mint leaves for garnish

Combine berries, 1/4 cup sugar and vanilla in a large bowl and toss well to coat.
Cover with plastic wrap and set aside at room temperature for 30 minutes.
Place 1/2 of berries in a food processor and puree them. Strain mixture to remove seeds, then set aside.
Combine whipping cream and 3 tablespoons sugar in a large mixer bowl.
Beat with an electric mixer on medium-high speed for 1 1/2 minutes or until stiff peaks form; set aside.
Melt white chocolate chips in a double boiler and fold into pureed berries.
Fold whipped cream into mixture, cover with plastic wrap, and chill for 1 hour.
Scoop 3 tablespoons of berry cream mixture into a dish, then top with 3 whole blackberries and mint leaves.
