Recipe makes 6 Servings

1/2 cup(s) bacon, diced small
3 garlic cloves, minced
1/2 cup(s) red onion, diced small
2 cup(s) frozen corn kernels
15 1/2 Oz black eyed peas, drained and rinsed
1 large jalapeño, seeds removed and pepper chopped
1 Pt cherry tomatoes, halved
1 Tsp Mi Tienda All Purpose Seasoning
2 Tbsp sherry vinegar
1/4 cup(s) Italian parsley, chopped

Set a large sauté pan over medium heat, add bacon and stir fry 3 to 4 minutes.
Add garlic, onions, and stir fry until onions are translucent.
Add corn, black eyed peas, jalapeños, tomatoes and seasoning. Continue to stir-fry an additional 6 to 8 minutes.
Add vinegar and parsley, toss and cook an additional minute then turn off heat.
Season to taste with more seasoning and serve.
