Recipe makes 12 Servings

2 (15 oz. cans) no salt added black beans, drained & rinsed
1/3 cup(s) canola oil
3 eggs, beaten
1/3 cup(s) cocoa powder
1 cup(s) brown sugar
2 Tsp espresso powder
2 Tsp vanilla extract
2/3 cup(s) all purpose flour
1 Tsp baking powder
1 Tsp kosher salt

Preheat oven to 350ºF. Spray an 8x8-inch dish with nonstick spray. Set aside.
Purée black beans and oil in a blender or food processor.
Add eggs, cocoa, sugar, espresso powder, and vanilla.
In a separate bowl combine flour, baking powder, and salt. Mix well.
Add flour mixture to bean purée and pulse until well combined.
Pour into prepared baking dish and bake until edges appear done but center is slightly wet, about 45 minutes. Remove from oven and cool completely before cutting.
