Bistro Fries with Truffle Salt

Ingredients

Recipe makes 8 Servings

2 Lb baking potatoes
1 peanut oil, gallon
1 Tsp Sabatino & Co. Truffle Salt
2 garlic, minced
2 Tbsp parsley, minced

Instructions

Line baking sheet with paper towels. Set aside.

Wash, peel, and cut potatoes into 1/4 inch thick sticks.

Place potatoes in large bowl, cover with water and chill.

Heat large Dutch oven on medium-high. Add 3 - 4 inches of oil.

Remove potatoes from water and pat dry.

Working in batches, blanch potatoes in hot oil until tender, but not brown. Remove from oil and place on prepared baking sheet. Continue until all potatoes have been blanched.

Remove from oil and place on prepared baking sheet. Continue until all potatoes have been blanched.

Turn heat up a bit, and working in batches, fry potatoes until golden brown. Continue until all potatoes have been fried.

Sprinkle fries with truffle salt, garlic and parlsey. Serve immediately.
