Bistecca with Charred Fennel and Truffle Essence

Recipe makes 3 Servings

2 Lb Bone in Cowboy or Tomahawk Rib Eye Steak, 1 3/4 inch to 2 inch thick
1 Tbsp Sabatino Truffle & Parsley Sea Salt, plus more as needed
1 Tbsp cracked black pepper, as needed
3 Tbsp unsalted butter
2 bulbs of fennel, green tops and bottom stem trimmed, bulbs cut into slices

Season steak liberally on both sides with sea salt and cracked black pepper, allow to sit at room temperature for at least 20 minutes.
Meanwhile, place a large cast iron pan over medium-high heat, allow it to get very hot and preheat oven to 400ºF.
Place steak into pan and allow it to sear for at least 3 to 5 minutes and get a nice crust before flipping steak and repeating on opposite side.
Once steak has been seared well on both sides, stand steak upright bone down if possible in oven to continue to cook.
Continue to cook steak until desired temperature is reached, approximately 15 to 20 minutes for medium.
Once steak is done, remove pan from oven place back on stove over medium heat, remove steak to rest on a plate, add butter and fennel and cook unitl nicely browned and soft.
Scrape up any bits left in pan to add flavor and seasoning to fennel. Serve over steak, season as needed.
Chef's Note: Standing steak up in pan will allow it to roast evenly and keep from overcooking one side of steak more than the other.
