2 large organic eggs
3/4 cup(s) organic coconut sugar
1/2 Tsp salt
1 1/2 Tsp cinnamon
1 Tsp ground ginger
1/4 Tsp ground nutmeg
1/4 Tsp cloves
1/4 Tsp ground cardamom
1 Tsp lemon, grated lemon zest
15 Oz H-E-B Organic Pumpkin Puree
12 Oz evaporated milk
1 refrigerated pie crust dough

Preheat oven to 425ᵒF.
Beat eggs together in a large bowl. Add sugar, salt, cinnamon, ginger, nutmeg, cloves, cardamom and lemon zest. Gradually stir in pumpkin puree and evaporated milk using an electric mixer. Mixture should be very smooth.
Gently press pie crust dough into a pie pan. Pour into prepared pie crust. Bake for 15 minutes at 425ᵒF. Then turn oven down to 350ᵒF and bake an additional 45 minutes, or until center is set.
Remove from oven and let cool on a wire rack for at least 2 hours. Makes 1 - 9 inch pie.
