Belgian Waffles with Pecan Pie Syrup

Ingredients

2 1/4 cup(s) pastry or cake flour, sifted
1 Tsp baking powder
1 1/2 Tsp Baking soda
2 Tsp kosher salt
1/2 Tsp cinnamon
4 large eggs, separated
5 Tbsp brown sugar
2 Tsp vanilla extract
1/2 cup(s) unsalted butter, melted
2 cup(s) low fat cultured 1% buttermilk
1 cup(s) Rosa's Pecan Pie in a Jar
1 cup(s) maple syrup

Instructions

Preheat waffle iron. In a bowl sift flour together with baking powder, baking soda then add salt and cinnamon, set aside.

In a second bowl use a wire whisk to beat together egg yolks and sugar until sugar is completely dissolved and eggs have turned a light tan color. Add in vanilla extract, melted butter, and buttermilk to egg yolk mixture and whisk to combine.

Combine egg yolk and milk mixture with flour mixture and whisk together until just blended. Do not over mix.

In a stand mixer or in a bowl using a hand mixer, beat egg whites until soft peaks form, about 1 - 3 minutes.

Using rubber spatula, gently fold egg whites into waffle batter. Again, do not over mix. Spray some non-stick spray on waffle iron and ladle in just enough batter to fill waffle iron. Cook to waffle iron specifications or until waffles are golden brown.

To make pecan pie syrup, add Pecan Pie in a Jar and maple syrup together in a small sauce pot. Place it over medium heat and stir to heat sauce. Cook just long enough for mixture to become syrupy. Keep warm and serve over individual waffles.
