2 Lb fresh red or golden beets or a mixture of both, rinsed and tops trimmed
1 head of bibb lettuce, rinsed and dried
1 Tsp toasted sesame seeds, plus more as needed
1/4 cup(s) Four J Sherry Shallot Dressing

Preheat oven to 400°F.

In a deep pan or any oven safe dish place beets along with a cup of water in the pan, cover with foil and roast for 45 - 60 minutes or until beets are fork tender.

Remove and allow to rest for 15 minutes before peeling. Peel skin off beets and cut them into larger chunks.

Assemble salad by placing bibb lettuce into a bowl and combine it with beets and sesame seeds. Drizzle with the Four J Sherry Shallot dressing. Season with salt and pepper to taste.
