Beef Fajita & Corn Salad with Salsa Ranch

Recipe makes 4 Servings

1 Lb beef fajitas, uncooked and marinated
1 1/2 cup(s) sweet corn, frozen
1/2 cup(s) light ranch salad dressing
2 Tbsp fire roasted salsa
6 cup(s) romaine lettuce, shredded
1 cup(s) unsalted tortilla chips, coarsely crushed
2 medium roma tomato, diced
1 cup(s) cheddar cheese, shredded

Heat a large, non-stick skillet over medium-high heat 2 minutes.
Cook fajitas 3 minutes per side then transfer to a plate and set aside.
Add corn to any juices remaining in skillet and stir fry 2 minutes or until thawed.
Remove skillet from heat and stir in dressing and salsa with corn and set aside.
Cut fajitas across the grain into long strips; cut strips into bite-sized pieces. Stir into skillet mixture.
Arrange lettuce shreds on individual plates or a serving platter.
Spoon beef mixture over lettuce.
Top with crushed tortilla chips, diced tomatoes and cheese.
