1 Lb ground beef
2 vine ripe tomatoes
1 cup(s) poblano pepper
6 H-E-B Homestyle Tortillas
1 Lb H-E-B Easy Melt Fiesta Cheese
4 Oz canned green chiles mild

Preheat oven to 350ºF.
Place a large non-stick pan on medium-high heat. Once the pan is hot add ground beef and brown. Meanwhile, start chopping tomatoes and peppers to pea size pieces.
Add vegetables and continue cooking for another 3 minutes, remove all ingredients from pan to be used for filling tortillas.
Take all tortillas and wrap in paper towels and place in microwave for 20 seconds. Cut cheese into 1/2" by 2".
Add green chiles to the warmed meat and stir around. Now start filling by placing cheese log in the middle of the tortilla. Add 2 ounces of meat filling or whatever looks good for you. Start rolling tortilla until both ends touch and everything is secured inside.
Fill and roll all tortillas. Using a 8x10" baking dish place all rolled tortillas trying to touch each one together. With left over cheese add to top of enchiladas. Place baking dish in oven and heat for 5 - 8 minutes, or until cheese is bubbling.
