Recipe makes 4 Servings

1 1/2 Tbsp pure olive oil
2 garlic, minced
1 Tbsp lemon, juiced
1 Tsp Dijon mustard
1 Lb broccoli raab, cleaned and trimmed
1 cup(s) red onions, chopped
1/4 cup(s) peppadew peppers
8 Oz H-E-B Fully Fit® Seasoned Roast Beef™, chopped
15 Oz spring mix

In a small jar or container with a lid, combine oil, garlic, lemon juice and mustard. Close lid tightly and shake vigorously.
Set a large pot of water to boil and add broccoli raab. Cook for 3 minutes or until bright green. Drain well and chop into 2-inch pieces.
In a separate large bowl, combine red onion, peppadew peppers, roast beef and spring mix and toss to coat.
