BBQ Pizza with Jackfruit

1 Tbsp avocado oil
1/3 cup(s) red onion, diced
1/3 cup(s) red bell pepper, finely sliced
2 Tsp garlic, finely minced
1/2 Lb fresh jackfruit, core and seed pods, (no rind or peel)
1/2 cup(s) vegetable broth
3/4 cup(s) Mark's Sweet and Spicy BBQ Sauce
1 Central Market Pizza Crust (frozen)
1/2 cup(s) baby spinach, finely chopped and pressed into cup for measuring
1 cup(s) H-E-B Whole Milk Shredded Mozzarella
1/2 cup(s) H-E-B Shredded Aged Gouda
1/4 cup(s) fresh cilantro, chopped

Heat a large skillet over medium-high heat. Add oil, onions, peppers and garlic to pan. Sauté until they begin to soften, about 4 to 5 minutes.
Cut jackfruit into very small wedges, including pulp and seed pods. Discard skin. Rinse well in a colander and pat dry with a paper towel.
Preheat oven to 350°F. Add jackfruit to pan with onions. Stir in broth and cover. Simmer for 10 minutes to soften. Mash and pull apart into "pulled pork" consistency.
Place in a single layer on a baking sheet and bake for 15 minutes. Remove from oven and drizzle with BBQ sauce. Stir to coat evenly.
Increase oven temperature to 400°F. Spread BBQ jackfruit evenly over frozen pizza crust. Top with spinach, cheeses and cilantro.
Bake for 7 to 9 minutes, or until cheese is nicely melted and crust is brown.
