Bamboo Rice with Black Garlic

Ingredients

Recipe makes 4 Servings

1/4 cup(s) white onion, minced
5 black garlic cloves, chopped
1 cup(s) bamboo rice
1 Tbsp seasoned rice vinegar
1 1/2 cup(s) water

Instructions

Place a small pot over medium heat, add oil, onions and black garlic, stir-fry for 2 to 3 minutes, then add rice.

Continue to stir fry for at least another 2 minutes or until rice is just fragrant and slightly toasted.

Add rice vinegar and water, and bring to a simmer. Once at a simmer cover pot with tight fitting lid.

Turn heat down to low and allow to cook for 15 to 20 minutes.

Fluff rice with a fork, season with salt and pepper.

Serve along side with any protein.

Chef's Note: This rice is also excellent served cold on a salad.
