Recipe makes 4 Servings

1 1/2 Lb Fresh Alaskan Halibut Fillets, cut 1-inch thick
1 Hill Country Fare No-Stick Canola Spray
1 Tsp H-E-B Iodized Salt
1 Tbsp black pepper, freshly ground
10 1/2 Oz roasted red peppers, drained
3/4 cup(s) Economax Lite Mayonnaise
1 Tsp Central Market Organics Balsamic Vinegar
1/4 Tsp Crushed Red Pepper
1/2 cup(s) H-E-B Onion/Garlic Croutons, crushed

Heat oven to 425°F.
Spray a large baking pan with non-stick cooking spray.
Season halibut with salt and pepper and lay in baking pan.
Combined drained pepper strips, mayonnaise, balsamic vinegar and red pepper flakes in a small bowl.
Spread mixture evenly over top of fillets and sprinkle with crushed croutons.
Bake 15-20 minutes or until fish has turned from translucent to opaque and is just beginning to flake in the center.
Serve immediately.
