Baked Cod with Crispy Cracker Crumbs

12 H-E-B Whole Wheat ITZ-A Crackers, crushed
3 Tbsp olive oil
1 Tbsp butter, melted
2 Tbsp Parmesan cheese, grated
1 1/2 Lb cod fillet, fresh or frozen

Instructions

Preheat oven to 400ºF and line a baking sheet with parchment or foil.

Combine crackers, oil, butter and cheese. Mix well.

Place cod on baking sheet and season to taste with salt and pepper.

Top cod with cracker crumbs and place in oven. Bake 20 minutes until fish is cooked through.

Serve with wilted spinach or sautéed green beans.
