Baked Chicken Taquitos with Chipotle Labneh

Ingredients

Recipe makes 6 Servings

1 Lb ground chicken
1 Tsp garlic powder
1 cup(s) Cookwell & Co. Green Chili Stew Mix
2 pkq. Carb Sense Whole wheat tortillas
1 cup(s) shredded Monterrey jack cheese
1/4 cup(s) Dip it Chipotle Labneh

Instructions

Preheat oven to 400°F and line a sheet pan with foil. Set aside.

Heat a large non-stick skillet over medium-high.

Add ground chicken and garlic powder. Cook several minutes, breaking apart chicken as it cooks.

Once Chicken is cooked through add stew mix. Cook until most of the liquid is gone.

While liquid in pan is reducing, wrap tortillas in a damp paper towel and place in microwave for 30 seconds.

Place about a half tablespoon of cheese in the tortilla and add 2 scoops of filling.

Roll the tortilla and place on foil lined sheet pan seam side down. Repeat until all taquitos are rolled.

Lightly spray nonstick spray over taquitos and bake 15 minutes or until edges begin to brown.

Let cool before serving. Serve with chipotle labneh.
