Recipe makes 4 Servings

1 zucchini, grated
1 Tbsp Olive oil
3/4 Lb extra lean ground beef
1 Tsp Cumin
1 Tbsp garlic, minced
1 Tsp Chili powder
1 Tsp Onion powder
1 non-stick cooking spray
1/2 cup(s) Shredded cheddar cheese
12 6 inch corn tortillas

Preheat oven to 425ºF.
Using a box grater, shred the zucchini squash, using a paper towel or a clean dry dish towel, squeeze the liquid out of the zucchini squash.
Heat oil in a large skillet on Medium-High. Add zucchini, beef and seasonings. Cook until well browned, stirring frequently, approximately 10 minutes.
Microwave the tortillas for 25 to 35 seconds to warm and make pliable.
Place ¼ cup of the zucchini beef mixture into the center of the tortilla, sprinkle with cheese then roll tightly.
Spray a baking sheet with non-stick spray. Pace the fluatas onto the baking sheet seam side down.
Spray finished flautas with a coating of cooking spray and Bake in the oven for 15 to 17 minutes. or until the tortillas are crisp.
