Bacon Wrapped Grilled Dates

Recipe makes 10 Servings

24 dates, pitted
2 Oz aged manchego cheese
12 thin slices serrano ham (about 1/3 pound), cut in half lengthwise
6 sprigs fresh rosemary, cut into 2 inch long pieces
3 Tbsp Spanish olive oil

Heat grill to medium. Lay dates out on a flat work surface.
Cut cheese into small rectangular shapes just big enough to stuff into cavity of dates.
Use the handle of a small spoon to gently open stem end of dates and carefully insert cheese.
Wrap each date with a thin slice of serrano ham and secure with rosemary "skewers."
Brush with a little olive oil and grill 2 to 3 minutes, just long enough to slightly char the outside. Remove from grill and drizzle with remaining olive oil.
Delicious served on small pieces of grilled bread or alone.
