Recipe makes 12 Servings

2 1/2 cup(s) all purpose flour
1 Tsp kosher salt
2 Tsp baking powder
1/4 Tsp ground cloves
1/2 Tsp ground cinnamon
1/2 Tsp baking soda
8 Oz unsalted butter, softened at room temperature
1 1/4 cup(s) brown sugar
1/4 cup(s) molasses
2 Tsp vanilla extract
1 Tbsp fresh lemon, zest only
1 1/2 Tbsp fresh ginger, grated or finely zested
3 large eggs
1 cup(s) H-E-B Premium Hayride Bacon, cooked and crumbled

Preheat oven to 350ºF.
In a bowl, sift together flour, salt, baking powder, cloves, and cinnamon, set aside.
In a small pot, add 3/4 cup of water to baking soda bring to a simmer. Remove from heat, set aside.
In a stand mixer, cream butter and sugar together until fluffy and light in color. Add in molasses, vanilla, zest, and ginger, mix again until well combined.
Add one egg at a time on low speed, making sure each egg is fully incorporated. Mix batter on low speed, then add baking soda along with dry ingredients a little at a time, keep mixer running in between additions.
Turn mixer on high speed and mix for an additional 45 seconds.
Pour batter into a greased and floured 9 inch square pan. Sprinkle bacon evenly on top and bake for 40 to 60 minutes, or until toothpick entered into center comes out clean. Cool before cutting and serving.
