Bacon Beer Mac n Cheese

Recipe makes 8 Servings

5 slices of bacon, diced
4 Tbsp all purpose flour
12 Oz Real Ale Axis IPA, or any IPA will do
16 Oz heavy cream
1 Tbsp whole grain mustard
8 Oz extra sharp cheddar cheese
6 Oz Parmesan cheese, shredded
1 clove garlic
1 Lb elbow macaroni, cooked

Cook diced bacon in a medium saucepan over medium-high heat.
Remove cooked bacon from hot grease and set aside.
Add in flour, reduce heat to medium and cook for several minutes stirring constantly until roux looks like wet sand.
Whisk in beer and cream, then allow sauce to thicken, about 2 to 3 minutes. Add in mustard and half of the cheeses.
Preheat oven to 350˚F.
Gently crush the garlic clove with your hand or knife and rub it all over the inside of a 9 x 13-inch baking dish, then discard.
Combine pasta with cheese sauce and transfer to baking dish. Top with remaining cheese and bacon.
Bake approximately 15 minutes until cheese is melted. Serve hot.
