Recipe makes 9 Servings

1 cup(s) H-E-B Premium Chophouse Bacon, diced small, about 6 to 8 slices
4 large ripe avocados, cut in half, seeded and peeled
12 Oz fresh pico de gallo
1/3 cup(s) fresh cilantro, chopped
1/4 cup(s) fresh lime jiuce
1 jalapeño pepper, seeded and chopped
2 garlic cloves, minced fine or zested
1/2 Tsp cumin
4 Oz H-E-B Crumbled Blue Cheese

In a large non-stick sauté pan, cook bacon until crispy. Drain off fat, then place on paper towels to cool.
In a large bowl add avocados, pico de gallo, cilantro, juice, pepper, garlic, and cumin mashing with a fork. (Texture is meant to be chunky, if you prefer a smoother guacamole, use a food processor.)
Fold in bacon and cheese, and season to taste with salt and pepper. Serve with chips, vegetables or on top of a burger.
