Bacon and Andouille Maque Choux

Recipe makes 8 Servings

1 cup(s) H-E-B Center Cut Bacon, diced
1 1/2 cup(s) smoked andouille sausage, chopped
1 cup(s) white onions, diced
1/3 cup(s) jalapeños, chopped
30 1/2 Oz H-E-B Organics Whole Kernel Sweet Corn, drained and rinsed
1/2 cup(s) green onions, chopped
2 Roma tomatoes, seeds removed and diced small

In a large pan or Dutch oven, add bacon and sausage, and cook until bacon starts to crisp. Transfer to a paper towel to drain.
Remove all but 2 tablespoons of rendered fat from pan.
Stir in onions, jalapeños and corn, and sauté 3 to 5 minutes or until onions are just soft.
Return bacon and sausage to pan, and add green onions and diced tomatoes. Toss to combine and season to taste as needed. Serve hot.
