Recipe makes 8 Servings

1 large haas avocado, flesh scooped out, pit and skin discarded
1 cup(s) water, plus more as needed for consitency
3 cloves of garlic, crushed
1/3 cup(s) green onions, chopped small
1/2 cup(s) fresh mint, leaves tightly packed
1/2 cup(s) cilantro, leaves tightly packed
1/4 cup(s) red wine vinegar
1/4 cup(s) lime juice

In a blender add all ingredients, blend until smooth and everything is incorporated.
If dressing is too thick, simply add a 1/4 cup more water at a time until desired consistency is reached.
Dressing should be creamy and not watery. Season to taste with salt and pepper as needed.
Chef's Note: This vinaigrette also works great as a dip for veggies too.
