Ingredients

Recipe makes 6 Servings

2 large Hass avocados, pits removed and flesh scooped out
1/3 cup(s) Four J Tomatillo & Avocado Fish Taco Salsa, plus more as needed to garnish
1/2 cup(s) fresh mint, leaves loosely packed
1 large jalapeño, stem & seeds removed, roasted if desired
1 1/2 Tbsp shallots, minced
1 Tbsp fresh lime juice, plus more as needed to taste
1 loaf of naturally leavened Tiger Bread, sliced to 1/4 inch thickness, as needed for toast
1/4 cup(s) extra virgin olive oil, as needed for toast

Instructions

Preheat oven to 350ºF.

Place all ingredients except bread and olive oil in a food processor and pulse until smooth, or if preferred, leave slightly chunky for a more rustic look.

Season to taste with salt and pepper as needed. Set aside to set up while making toast.

Place slices of bread on a sheet pan lined with parchment paper. Drizzle with olive oil and a pinch of salt and pepper. Bake 10 to 15 minutes or until bread is just toasted and crunchy.

Spread avocado mixture on toast and serve.

Chef's note: I like to serve mine with pickled red onions and topped with a fried egg for a great brunch treat.
