Avocado Toasts with Mint, Orange Oil and Pecorino

Recipe makes 4 Servings

6 slices Rosemary Sourdough Golden Grain Bread, plus more as needed
4 Tbsp Sonoma Gourmet Orange & Rosemary California Extra Virgin Olive oil, divided use
3 medium Hass avocados, pit removed flesh scooped out
1/3 cup(s) fresh mint, roughly chopped
1 1/2 Tbsp Gourmet Garden Lightly Dried Chives
2 garlic cloves, zested or finely minced
1 large lemon, juiced
1 Tsp cumin
1 Tsp coriander
1 cup(s) Pecorino Romano, grated

Preheat oven to 400ºF.
Place bread slices on a sheet pan lined with parchment paper.
Drizzle a little olive oil over each slice, baking for 12 to 15 minutes or until just toasted.
Set bread aside to cool.
Meanwhile, make avocado spread by combining avocados, mint, chives, garlic, lemon juice, cumin, coriander and remaining olive oil together.
Mash avocados gently folding to keep it in larger pieces while still incorporating all ingredients together. Season to taste as needed.
Smear a good amount of avocado mixture on each toast and garnish each with a good amount of grated Pecorino.
