Recipe makes 6 Servings

1 poblano pepper
1 cup(s) mozzarella cheese
1 red bell pepper
1/2 cup(s) corn, roasted, shaved off the cob
1/2 cup(s) fresh cilantro, chopped
1 large Large Hass avocado, diced
1 cup(s) H-E-B Mexican Cheese Blend, shredded
6 red tostada shells

Roast poblano pepper on grill until browned, about 5 minutes per side. Remove skin, seeds and stems, and dice.
Preheat oven to 350°F.
In a large bowl, add diced avocado, diced poblano pepper, mozzarella, red bell pepper, corn and cilantro. Stir to combine. Add salt & white pepper to taste.
Lay out tostadas on cookie sheet and top center of each with vegetable mixture.
Top with shredded Mexican cheese and bake for 5 minutes until cheese is melted. Serve hot.
