Recipe makes 8 Servings

4 Oz piloncillo, about half of the cone
1 cup(s) water
3 cinnamon sticks, plus more for garnish
32 Oz milk
3/4 cup(s) Maseca
2 Tsp vanilla extract, or 1 vanilla bean
1/2 Tsp salt

Combine piloncillo, water, and 3 cinnamon sticks together in a medium sized saucepan. Bring mixture to a simmer over medium-high heat and stir until piloncillo is completely dissolved, then add in the milk.
Whisk in the maseca, and stir constantly for 3 to 4 minutes until smooth and no lumps are visible. Reduce to a low simmer for 15 minutes then add in vanilla and salt.
Strain through a a fine mesh sieve if desired. Serve hot and garnish with a cinnamon stick.
